Garten said it’s one of her favorite methods to make “a whole meal in one dish” while showcasing her roast chicken cobb salad recipe on the Barefoot Contessa cooking show.
Garten suggests prepping all of the components first, then “putting it all together right before serving.”
She starts by cooking bacon for 20 to 25 minutes on a wire rack positioned over a sheet pan in a 350°F oven. Garten uses Stilton blue cheese, which he cubes after first removing the rind, because crumbling it in the salad “makes everything seem messy.”
Garten dices the avocados into large chunks to make them more apparent, then adds lemon juice to brighten them up. “I want everything to be absolutely clear when I do an assembled salad,” she says.
She rinses and dries the arugula in a salad spinner, praising the lettuce’s “very lovely peppery flavor,” and slices cherry tomatoes in half through the stem.
